This sake is crafted by a brewery that is dedicated to quality, with a desire to compete on quality rather than price or brand name. It is a Junmai Daiginjo with a fragrant, elegant flavor and a refreshing aftertaste!

This is my third visit to Tsuchiura. It's also my third time visiting this ryotei(Japanese-style restaurant). It somehow feels calming. I can sense an atmosphere somewhat similar to 'Oota Nawanoren' in Yokohama. This Ryotei is a historic ryotei that used to serve the Imperial Japanese Navy. I recommend it to anyone interested in the Imperial Navy. Tsuchiura (in Ibaraki prefecture) is far from Tokyo, but there are Self-Defense Force facilities that can be toured with prior application, and there's also Yokaren(Preparatory Flight Training) Peace Memorial Museum, so there are attractions to see.
At the Yokaren Peace Memorial Museum, I initially felt a certain sadness when looking at the unwavering eyes of the young falcons captured in the photographs. But then I realized that this feeling was perhaps just the sentimental musings of a middle-aged man, indulging in emotions from the safety of a "peaceful era" (like, "Well, that's just your opinion, right? LOL"). Once I shifted my perspective to simply accept the fact that, while they lived through extraordinary circumstances, they also experienced their youth, and some of them gave their lives in the war. This helped ease my melancholic feelings. What kind of impression would you have, I wonder?
Perhaps because 'Tsuchiura' doesn’t feel as crowded as the metropolitan area, it's a town where I can feel at ease.
Now, about this sake, 'Makko Shobu Junmai Daiginjo'—I tried it here for the first time and it was delicious. It's made by 'Raifuku Shuzo.' It's soft, slightly sweet, with a moderate acidity, and easy to drink. And delicious. Compared to the same-sized Dassai 23, it's more affordable. But still delicious. Encountering a favorite drink while dining out... it's nice (^_^).
