The most highly regarded sake brewery in the industry right now is Shinsei Shuzo from Akita Prefecture. "Kosumosu" (Autumn Cosmos), the only sake in the Shinsei Colors series brewed using a wooden vat, stands out with its beautiful pink label. Made with 100% Akita-grown "Kairyoshinkou" rice, this Shinsei Junmai has a rice polishing ratio of 40% for both the koji and the fermenting rice. Of course, the yeast used is Association No. 6. It features a soft, rounded, and gentle umami flavor.
