This is the first time I've tried Kijoshu. [A gourmet party at a certain restaurant]

Kijoshu is a type of sake where, during the brewing process, part or all of the brewing water is replaced with sake. Specifically, in the final stage of the three-stage fermentation process, known as "tome-shikomi," part of the brewing water is substituted with sake. This is what I've heard. I tried it for the first time, and I found it to be light, sweet, and very easy to drink. It was delicious!
