Sometimes I went to the "bar Jam" in Koiwa, and oneway I noticed that the bartender was particular about Gin. He changed Gin when customers ordered gin-based cocktails. And in many cases he selected Gins which I know the name but I had never tried. I thought he had already tried many Gins to make better gin-based cocktails and finally he had known the combination of Gin and gin-based cocktail.

For example, when he made gin and tonic, he did not select "beefeater". In my bar hopping experience, beefeater is usually selected by bartenders if their customer is not particular about base gin. So I asked him to recommend me very good Gin which I should drink neat. And he said to me, "If you are interested in Gin, please try this special gin 'STAR OF BOMBAY'".

My impression was .... "Woh! Excellent! How sophisticated this is!" Its combination of botanical[juniper berries, grains of paradise, Coriander, cassia bark, iris root,,,] is some sort of art. How much is this bottle??? Oh! I can buy some famous whiskies for this price!!
