CLAIRIN ANSYEN VAVAL 27 MONTHS

Selected by Joseph Akhavan for le Mabel, Paris and born at Fritz Vaval's distillery, this Clairin is delicatly influenced by scotch whisky. Aged in ex-whisky casks from december 8th, 2015 and bottled 27 months later in march 2018.

Clairin is a distilled alcoholic spirit made from sugarcane produced in Haiti, that undergoes the same distillation process as rhum. Clairin is made from indigenous cane varieties, non-hybridized, with no chemical interference in the agriculture. They are spontaneously fermented with no yeast selected, distillation techniques from the mid-18th century, and no filtration.

From its aroma, I felt faint cemedine [glue] and sweet oy flour. It was not bad. And its taste is relatively smooth and light.
