You don't often hear 'Caol Ila' and 'sherry' in the same sentence. This one's from a refill Sherry butt. G&M's sister cask (x Bourbon) was described as "Stunning" in Jim Murray's 2021 Whisky Bible. At near 60%, expect something pretty special from Cask 306618 - an altogether more feisty Caol Ila, with added richness and perhaps a nod to its peppery cousin on Skye. 535 bottles at 58.9% Alc./Vol. Comes non chill filtered.

I was very impressed with its deep and rich chemical [crispy bacon and Rubber]. The taste was relatively smooth and natural. I could not feel any Sherry Cask influence inside its flavor. Anyway this GM CAOL ILA is wonderful. If you love Caol Ila and have chance to see this bottle at bar, you should drink.
